This wonderful Shelina Permalloo choux pastry recipe is a delight to make and truly delicious with a tropical passion fruit cream filling, balanced delicately with a white chocolate topping. This is a wonderful alternative to the classic cream and &nbsp;dark chocolate Profiteroles. It is probably a little sweeter than the classic recipe but the passion fruit really adds a fruity balance to the dish. Unlike classic Profiteroles this recipe uses mascarpone cheese for the filling which compliments the choux pastry really well.

Jazz up some croissants by following this simple recipe for a wonderful breakfast treat. Our Cornetto Alla Cremas recipe works best by using up some slightly stale large Croissants as the sweet and creamy vanilla filling brings them back to life. This recipe was provided by Master Pâtissier Eric Lanlard.

This chocolate mille feuille recipe was featured in the first series of Baking Mad with Eric Lanlard on Channel 4. A classic Mille Feuille recipe is made up of three layers of puff pastry, sandwiching a crème patisserie filling. They are often flavoured with a chocolate drizzle or sliced almonds. Our Chocolate Mille Feuille recipe however combines some really luxurious ingredients such as dark chocolate, Creme De Cassis and blackberries. To get great looking Mille Feuille make sure you are slicing your baked puff pastry evenly and keep your hand steady while piping out the filling. It is sometimes worth practicing with the piping bag before adding the filling to your puff pastry rectangles. We've included a video above to show you the best way to make puff pastry.&nbsp;

Chocolate Mille Feuille With Blackberries & Cassis

Similar to the Spanish doughnut treat, churros, these apple cider crullers are pretty much the same thing. The only difference is they're shaped in rings rather than fat, spikey sausages. The pastry itself is just a choux pastry and for the flavour use a dry cider in place of water, which gives the pastry that apple undertone. Thanks to John Whaite for this fantastic recipe.
