Fig, goats cheese and onion tartlets
About the bake
These adorable little tartlets are ideal for a quick lunchtime bite, picnic or to serve at a special dinner party. The crisp filo pastry cases go beautifully with the classic combination of caramelised onions and goats cheese. Topped with a slice of fig and drizzle of honey – perfection!
Method
Step 1
Preheat oven to 180°C (fan 160°C, gas mark 4) Prepare two muffin tins.
Step 2
In a large frying pan, melt a couple of knobs of butter, add the dark muscovado sugar and fry the onions on a low heat for approximately 20 minutes until caramelized.
Step 3
Melt the remaining butter and lightly brush over the pastry, before slicing into approximately 6cm squares.
Step 4
Double up the squares and push them into the holes in the muffin tin.
Step 5
Before filling the pastry cases your will need to bake for 4 minutes in the oven or until golden.
Step 6
Once baked spoon in a layer of the fried onions, top with some goats cheese and pop back in the oven for a few minutes until the cheese begins to melt (be careful not to let the pastry burn).
Step 7
Remove the tartlets from the oven and chop the figs into quarters.
Step 8
Finish the tartlets with a slice of fig and a drizzle of honey if liked.
