About the bake

These oat cookies with raisins and honey are quick, easy and delicious.  Enjoy as cookies or why not serve with ice cream for a special treat!

    Method

    1. Step 1

      Preheat the oven to 150°C (fan 130°C, gas mark 2). Line 2 baking sheets with baking paper.

    2. Step 2

      Combine flour, oats, cinnamon, sugar, raisins and nuts in a large bowl.

    3. Step 3

      Melt butter in a small saucepan over a low heat and add combined bicarbonate of soda and the boiling water and honey.

    4. Step 4

      Stir the warm butter mixture into dry ingredients. Roll level tablespoons of mixture into balls, place on prepared trays leaving space for spreading during baking. Press down ever so slightly with the back of a spoon.

    5. Step 5

      Bake for about 20 minutes, cool on the trays for 5 minutes before transferring to a wire rack.

      • 70gGround Almonds 
      • 125gUnsalted butter (softened) 
      • 2 tbspHoney 
      • 1/2 tspBicarbonate of soda 
      • 2 tspBoiling water
