About the bake

There are many traybake recipes out there but we think our Marmalade Tray bake is certainly one of the best and one of the most simple to bake too. The trick with this bake is to get a really good, thick cut marmalade and some orange liqueur to bring out the zesty notes of orange. This recipe was featured in the second series of Baking Mad with Eric Lanlard on Channel 4. It is the perfect accompaniment to a cup of tea in the afternoon.

    Method

    1. Step 1

      Preheat the oven to 180°C (fan 160°C, gas mark 4). Grease and line a shallow baking tray with baking paper

    2. Step 2

      Mix the butter and sugar together until creamy.

    3. Step 3

      Add the eggs in one at a time and mix. Sift in the flour and baking powder and mix.

    4. Step 4

      Add in the milk, liqueur and marmalade and fold in the chopped cherries by hand.

    5. Step 5

      Turn the mixture out into the prepared tin and flatten down. Bake for 35-40 minutes. Remove from the oven and leave to cool

    6. Step 6

      For the glaze, melt the remaining marmalade in a bowl over a boiling pan of water. Using a pastry brush, glaze the top of the cake.

      • 2 tbspMarmalade (thick cut.) 
      • 100gGlacé cherries 
    • For the glaze

      • 2 tbspMarmalade
