About the bake

If you are a fan of the humble Mince Pie then you are going to love these. Soft chewy festive spiced cookies with all of your favourite flavours of mincemeat - what's not to love?

    Method

    1. Step 1





      Preheat the oven to 170°C (gas mark 3) and line 2 baking sheets with baking parchment.




    2. Step 2





      Cream together the butter and both sugars until pale then add the egg and mix together well.




    3. Step 3

      Sift in the flour, spices, salt and bicarbonate of soda and add to the butter sugar mixture and mix thoroughly until a dough forms, then stir in the sultanas and candied peel.

    4. Step 4





      Break off pieces about 1 tablespoon in size and roll into balls.




    5. Step 5





      Place these on the baking sheet leaving about 5cm space in between them to allow for them spreading out during baking.




    6. Step 6





      Place in the oven and bake for 15-20 minutes or until the cookies are light golden brown.




    7. Step 7





      Leave to cool on the baking sheet for about 10 minutes then move to a wire rack to cool completely.

      • 190gAllinson's Plain White Flour 
      • 100gSultanas or raisins 
      • 80gCandied peel (lemon/orange) 
      • 1 tspGround cinnamon 
      • 1/2 tspGround nutmeg 
      • 80gBillington's Unrefined Light Muscovado Sugar 
      • 1Free range large eggs 
      • 1/2 tspSalt 
      • 1/2 tspBicarbonate of soda
