About the bake

These reindeer cookies are so easy to make and are perfect for occupying the family over the festive period. Simply cut from yummy biscuit dough, they are perfect for gifting to friends and family in a hand tied bag or simply freeze the dough before baking to keep them for longer.

    Method

    1. Step 1

      Place the flour, bicarbonate of soda and spices in a food mixer and mix until evenly distributed.

    2. Step 2

      Add the butter and mix until you reach a consistency similar to breadcrumbs. Mix in the sugar, ensuring that any chunks of sugar are broken up.

    3. Step 3

      In a separate bowl, mix together the egg and golden syrup, then gradually pour in with the other ingredients.

    4. Step 4

      Continue to mix the ingredients until it forms a dough, then remove and knead for a few minutes by hand.

    5. Step 5

      Wrap the ball of dough up in cling film and chill in the fridge for 15-20 minutes.

    6. Step 6

      Preheat your oven to 180°C (160°C, gas mark 4) and line 2 baking trays with baking paper.

    7. Step 7

      Remove the dough from the fridge and roll out to approximately 0.5cm in thickness. Use your template to cut out your shape with a knife or use a cutter if you have one, place the cookies on the tray leaving an inch or so gap in between each one and bake for approx. 12-15 mins until going dark and golden around the edges and firm to touch. Eave to cool on the trays for 10 mins before placing onto a wire rack to cool completely.

    8. Step 8

      To decorate, pipe chocolate details over the antlers and ears for the detail and make little faces by moulding tiny pieces of icing as shown. Stick onto the cookies with a little edible glue or syrup and leave to dry before wrapping.

      • 1.5 tspBicarbonate of soda 
      • 3 tspGround ginger 
      • 2 tspCinnamon 
      • 125gUnsalted butter (softened) 
      • 175gBillington's dark muscovado sugar 
      • 1Egg (free range) 
      • 4 tbspSilver Spoon Golden Syrup 
    • For the decoration

      • 75gDark chocolate (melted) 
      • A tiny amount of Black and white sugar paste for eyes 
      • A little golden syrup loosened with a splash of hot water or edible glue for sticking 
      • 50gRed ready to roll icing
