About the bake
We are going nutty for these cute squirrel biscuits. It is really simple to bake these and decorate to resemble our favourite woodland critters, so why not get the whole family involved in the fun.
Method
Step 1
Sieve the flour, baking powder and salt into a bowl and set aside.
Ingredients for this step
- 200gAllinson's plain white flour
- 0.5 tspBaking powder
- 0.5 tspSalt
Step 2
In a large bowl cream the butter and sugar until pale. Beat in the egg and vanilla extract.
Ingredients for this step
- 90gButter (unsalted) (softened)
- 100gBillington's Unrefined Golden Caster Sugar
- 1Egg(s) (free range)
- 0.5 tspNielsen-Massey Vanilla Extract
Step 3
Add the flour to the butter mix and blend until the dough is formed. Wrap the biscuit dough in cling film and chill for at least one hour.
Step 4
Preheat the oven to 170°C (150°C fan, gas mark 3) Roll the dough out on a lightly floured surface to about 0.5cm.
Step 5
Cut out the biscuits using a squirrel cookie cutter and transfer on to a baking sheet. Roll up the trimmings and repeat stage above to make more biscuits. Bake for 8-12 minutes until golden.
How to Make Your Own Cookie Cutters
You can make your own templates to use instead of cookie cutters so you can make any shape of cookie you like! Draw directly onto a piece of baking paper, or trace an outline from a printed image. Cut the template out with a pair of scissors then place the template on your rolled cookie dough and carefully cut around the edges with a sharp knife
Step 6
Remove and transfer to a cooling rack and leave until completely cool before decorating.
