White Chocolate & Cranberry Rocky Road

Driving home for Christmas? The only road we will be looking forward to seeing this holiday season is this scrumptious White Chocolate & Cranberry Rocky Road. A fun and simple recipe to make with your kids this year and a great way to use up any leftover biscuits, gingerbread men or sweets after the big day (if your family hasn't scoffed them all) This Rocky Road recipe has a delicious festive twist with the inclusion of crushed gingerbread biscuits and cranberries and makes a fantastic last minute homemade gift for the foodies in the family.
Method
Step 1
Grease and line a 20cm square baking tin with baking parchment.
Step 2
Chop 425g of the white chocolate and place in a bowl over a pan of simmering water and allow to melt gently. Put the reserved 50g to one side.

- 475gWhite chocolate
Step 3
Break up the gingerbread men so that you have a mixture of chunks and biscuit rubble. Weigh out all the other ingredients and set aside 15g each of the cranberries and nuts. Chop up the sweets into about 5 pieces each.

Step 4
When the chocolate is melted, allow it to cool a little and then stir in the marshmallows, cranberries, nuts, sweets and lastly the biscuits.

- 50gMini marshmallows
- 30gChopped almonds
Step 5
Top the Rocky Road with the reserved cranberries and nuts. Melt the reserved white chocolate and drizzle it all over the top in lines.
Step 6
Press the mixture into your prepared tin and squish it down so it is as level as possible.
Step 7
Chill until set then cut into 16 squares.
