About our Banana Muffin recipe:
These banana muffins are deliciously moist, moreish and simple to make - so if you’re after a delicious treat for your family and friends, they’re a great choice. Taking only 15 minutes to prepare and 25 minutes to bake, it’s a speedy way to make a sweet treat in under an hour.
Our banana muffins are also a good way to use up overripe bananas, and they're a delicious fruity snack that's perfect at any time of day.

Method
Step 1
Preheat the oven to 180°C (fan 160°C, gas mark 4) and line a 12 hole muffin tin with paper cases.
Step 2
Sift the flour into a mixing bowl and add the baking powder.
Step 3
In a separate bowl, cream together the butter and sugar. Be careful not to overmix, as this will cause the butter to separate. Add the creamed butter and sugar to the flour and baking powder mix.
Step 4
Finally, add the eggs, mashed banana and milk to the mixture.
Step 5
Gently mix of the ingredients together until smooth.
Step 6
Using a silicone cooking spoon, add the mixture evenly into the paper cases and place in the oven for 25 minutes. They’re done when a skewer comes out clean and the muffins are golden brown in colour.
Step 7
Remove from the oven and pop on a cooling rack.

- 225gAllinson's Self-Raising White Flour
