Our no-bake rocky road recipe is simple, delicious and fun to make. It’s filled with gooey marshmallows and crumbly biscuits, then covered in rich, velvety chocolate.
<h3>What does rocky road have in it?</h3>
Typically, rocky road contains dark and milk chocolate, with chunks of marshmallow and biscuit inside. However, variations also contain peanuts, raisins, almonds, or anything else you like! We’ve also drizzled ours in white chocolate, but you could also do this with Nutella or caramel sauce.
<h3>How did rocky road get its name?</h3>
Rocky road takes its name in reference to the chunks of biscuits and chocolate packed into the recipe.
<h3>What’s the difference between tiffin and rocky road?</h3>
Often, rocky road is known as ‘rocky road’ in the US and known as ‘tiffin’ in the UK. However, the difference between rocky road and tiffin is how the chocolate mixture binds together, as well as the ingredients used.
Some tiffin recipes often use condensed milk and cocoa powder, then add the chocolate on top. <a href="https://www.bakingmad.com/recipes/tiffin">Tiffin</a> also tends to contain a medley of fruits, rather than the marshmallows found in rocky road. Rocky road is typically made using melted chocolate and syrup to hold the ingredients together.

Biscoff Rocky Road

This triple-layered drip cake is really something else. You are looking at 3 completely different layers: chocolate chip cookie, then a crushed oreo layer topped with a brownie layer. The top is drenched in a chocolate ganache with lots of biscuits and cookies on the top. 
 
Although it looks like a challenge, it's the same basic sponge mixture with different additions for each layer which makes it relatively simple to make. You're going to want to eat a big slice of this. Put your stretchy pants on.

Jane's top tip to customise your cookies:
"You can substitute the caramels for spreads, such as chocolate and hazelnut spread or biscuit spread. Simply freeze teaspoons of spread for at least 30 minutes, then wrap the cookie dough around the frozen spread in the same way.
The milk chocolate can be switched to white or dark chocolate.
Make the cookie dough chocolate by using 250g plain flour and adding 35g cocoa powder."
