Cosmopolitan Cocktail Cupcakes

Method
Step 1
Preheat the oven to 170°C (150°C, gas mark 3) and place 12 cupcake cases in a cupcake or muffin tin.
Step 2
Place the butter, flour, sugar and baking powder into a large bowl and using a hand held or freestanding electric mixer, slowly mix together until it resembles breadcrumbs.
Step 3
Mix together the eggs, orange & lime juice, and milk in a jug then gradually add to the bowl. After mixing thoroughly, spoon the mixture into the cases until they are about 2/3 full.
Step 4
Bake in the oven for 25 minutes or until the cakes are golden brown and a skewer comes out clean.
Step 5
To make the frosting, mix together the butter and icing sugar until it resembles breadcrumbs in texture, then add the milk and vodka and mix on a high speed until the frosting is soft and fluffy.
Step 6
Decorate the cupcakes with frosting using either a piping bag or palette knife and finish with a raspberry on a cocktail stick.

- 120gAllinson's Plain White Flour
- 1 tspBaking powder
- 1Egg(s) (free range) (large)
- 75mlMilk (whole)
- 1 tbspOrange juice
- 1 tbspLime juice
- 1 tbspGrand marnier
For the buttercream
- 80gButter (unsalted) (softened)
- 250gSilver Spoon Icing Sugar
- 2 tspMilk (whole)
- 2 tspVodka
- Raspberries (to decorate)
