About the bake
This is a flavour combo that you really should try. These maple bacon cupcakes consist of a cinnamon spiced cupcake, topped with a maple flavoured buttercream, crispy bacon bits and drizzled with a generous serving of Maple syrup flavoured treat, they are sure to make a great conversation starter when served at a party.
Method
Step 1
Preheat the oven to 180°c / 160°c fan and line a 12 hole muffin tin with 12 cupcake cases.
Step 2
Place the butter and sugar in a mixing bowl and beat with a wooden spoon or electric mixer until light and fluffy. Gradually beat in the eggs and vanilla extract a bit at a time until smooth, adding a little of the flour if the mixture starts to curdle.

- 1/2 tspNielsen-Massey Vanilla Extract
Step 3
Sift and fold the flour and cinnamon into the mixture before folding in the Maple flavoured Treat. Divide the mixture evenly between the cupcake cases and bake in the pre-heated oven for 18-20 minutes or until a skewer comes out clean. Leave to cool slightly before removing from the tin and leaving to cool fully on a wire rack.

Step 4
To make the buttercream beat the butter until softened before adding the icing sugar in two parts. Add the maple syrup flavour Treat and a tablespoon of milk if required to loosen the buttercream slightly.

Step 5
Grill the bacon until crispy and set aside to cool before cutting into 1 inch long pieces.

Step 6
Pipe swirls or rounds of icing onto the cupcakes before adding a piece of bacon (or more if desired) Finish with a final drizzle of maple flavour Treat before serving.
Step 7
These cupcakes are best eaten within a few hours of making or alternatively we recommend cooking the bacon on the day of the desired serving.
