About the bake

Perfect for your picnic lunch box or an afternoon treat – these mini muffins are just over a mouthful. This Mini Muffin recipe makes Muffins just like you'd get in the supermarket with the added satisfaction of making them yourself. In our experience they are a big family favourite, quick to make and easy to clean up after too.

    Ingredients

      • 110gButter (unsalted) (softened) 
      • 65gBillington's Unrefined Golden Caster Sugar 
      • 2Egg(s) (free range) 
      • 110gAllinson's Plain White Flour 
      • 1.5 tspBaking powder 
      • 65gDark chocolate chips 

    Utensils

    • Mini muffin tin
    • Mini muffin cases
    • Mixing bowl
    • Cooling rack

    Method

    1. Step 1

      Preheat the oven to 200°C (fan 180 °C, gas mark 6). Line a mini muffin tin with paper muffin cases.

    2. Step 2

      Cream the butter and sugar together then slowly add the eggs and vanilla extract, mix for three minutes.

    3. Step 3

      Add the flour, baking powder and chocolate chips stir to combine.

    4. Step 4

      Place a spoonful of muffin mixture into each muffin case, filling each to just over half way.

    5. Step 5

      Bake for 20 minutes, or until golden on top. Leave to cool in the tin for 5 minutes, eat warm or cold.
