Method
Step 1
In a bowl combine together the flour, baking powder and salt.
Step 2
In a separate bowl, beat together the sugar, butter, eggs and vanilla until light and fluffy in texture.
Step 3
Add your dry ingredients into the bowl and mix with a spoon until it forms a soft dough.
Step 4
Roll your dough out into a 12 inch long cylinder/sausage shape. Cut in half and wrap each piece of dough in clingfilm.
Step 5
Chill the dough in the fridge for an hour or alternatively you can freeze your dough at this point for baking another day.
Step 6
Preheat your oven to 160c.
Step 7
Remove your dough from the fridge, equally divide each ‘log’ of dough into 10-15 slices.
Step 8
Roll each slice into equal sized balls, then roll them in a bowl of sesame seeds until they are evenly coated.
Step 9
Place each ball of dough onto a baking sheet covered in parchment paper. Space the cookies out as they will spread out when baked.
Step 10
Bake for 15 minutes until golden brown in colour.
Step 11
Allow the cookies to cool for a few minutes on the baking sheet before removing onto a wire cooling rack.
