This patriotic cake is perfect to make for a street party to celebrate the Queen's Platinum Jubilee or just to celebrate being British!
Our great British celebration cake is a classic square sponge cake, decorated with strawberries, raspberries, blueberries, and whipped cream.

Method
Step 1
Preheat the 180°C, (fan 160°C, gas mark 4). Grease and base line 2 x 20cm square sandwich tins or one 20cm square cake tin.
Step 2
Sift the flour and baking powder into a large mixing bowl, add the remaining cake ingredients and beat with a wooden spoon until smooth.
Step 3
Spoon the mixture into the tin. Bake for 30 minutes in the sandwich tins or 45 — 50 minutes in the square tin. Turn out on to a wire tray.
Step 4
Put the lemon juice and sugar in a saucepan and heat gently until the sugar has dissolved.
Step 5
Whilst cake is warm, drizzle the syrup over so that it soaks into the cake.
Step 6
When cold, split the square cake in half horizontally (if you have used one large cake tin) and sandwich together with half the whipped cream. Spread the remainder whipped cream over the top of the cake. Decorate with fresh berries in the shape of a Union Jack.
