    Method

    1. Step 1

      Preheat the oven to 180°C (fan 160°C, gas mark 4) and lightly grease and line a 12 hole muffin tin with paper cases.

    2. Step 2

      Place all of the ingredients in a mixing bowl and beat until smooth.

      • 175gBillington's Unrefined Golden Caster Sugar
      • 225gAllinson's self-raising flour
      • 1 tspBaking Powder
      • 3 tbspMilk (whole)
      • 2Banana(s) (very ripe, mashed)
      • 100gDark chocolate chips
    3. Step 3

      Spoon the mixture evenly into the paper cases and place in the oven for 25 minutes or until a skewer comes out clean and the muffins are golden brown in colour.

    4. Step 4

      Remove from the oven and cool on a cooling rack.
