About the bake

We've all been there, swept up in the hustle and bustle of December until you remember you forgot to whip up your traditional Christmas Pudding. Well, rest assured we're here to save the day with our Last Minute Christmas Pudding - so quick you can even make it on Christmas Eve. 

Simply drizzle with boozy brandy butter or a simple cream or custard and you're good to go. If you're feeling extra festive, try our Bailey's custard with all the flavour and a cheeky tipple of Irish Cream Liqueur.

    Method

    1. Step 1

      Butter and line the base of a 1.5 litre pudding basin, which is suitable for use in a microwave, with greaseproof paper.

    2. Step 2

      In a large bowl, stir the ingredients together, adding them one at a time in the order listed in the ingredient list. Stir to combine evenly.

      • 300gMincemeat
      • 140gMarmalade (fine shred)
      • 200gBillington's Unrefined Molasses Sugar
      • 4 tbspBlack treacle
      • 3Free range large egg(s) (beaten)
      • 4 tbspWhisky
      • 100gUnsalted butter (frozen & grated)
      • 100gAllinson's Self Raising Flour
    3. Step 3

      Tip in to the prepared pudding basin and cover with a disk of greaseproof paper. Place the pudding on a plate and microwave on medium for 20 - 25 minutes until cooked and a skewer inserted comes out clean.

    4. Step 4

      Leave to stand for 5 minutes, then turn out and enjoy served with brandy butter.

    Just made this for the second time,on Easter Monday.Really good.
    Made1/3 and cooked for 7 mins,maybe 71/2 next time.

    Sounds amazing and I love all of your recipes so I have rated it as 5 stars though to be honest I haven’t made it yet because I don’t have a microwave. Could it be cooked in an Aga? If so, how long would it take?
